I am no chef, in fact I freely admit that I hate cooking. That being the case, the family still need to get fed and for the most part it is up to me to make that happen.
One trick a friend told me about years ago has saved my sanity on many an occasion. Before visiting her for a few days I was completely unaware that you could freeze rice. It might sound like a strange thing to be excited about and perhaps everyone knows you can do it but it came as a complete surprise to me and made such a difference to the way I cook.
I had a rice cooker at the time and there was pretty much one quantity you could make- too much. The leftovers would sometimes be used for lunch the next day but mostly they would be thrown out because we never felt like eating rice two days in a row.
Another problem for me was that rice takes so long to cook. This is particularly true if you are using brown rice. Try to get dinner on the table in a hurry after work, plan to have rice and see how that works out. Not well in my experience.
After discovering that it could be frozen I began to measure the leftovers out into meal sized portions and freeze individually. Now all I have to do is take the container out of the freezer, zap it in the microwave for a couple of minutes and I have the perfect quantity for any dish I might want to make.
Almost instant rice without resorting to using something full of preservatives out of a packet.
